Ingredients
Omelette Ingredients
- 3 Egg Whites
- 1 Egg Yolk
- 2 tbsp Milk
- 1/2 Bell Peppers capsicum, finely chopped
- 5-7 sprigs Dill finely chopped, fresh
- Salt to taste
- Pepper black, to taste
- 1 pinch Oregano dried
- 1/2 tbsp Butter
Roasted Vegetables
- 1 bunch Asparagus trimmed
- 1 punnet Cherry Tomatoes
- 1/2 tbsp Butter
Instructions
- Finely chop the bell pepper and fresh dill. Set aside.
- Trim the ends of the asparagus. Set aside with the cherry tomatoes.
- In a bowl, whisk together the egg whites, egg yolk, milk, chopped bell pepper, dill, salt, pepper, and oregano. The milk adds moisture and helps create a light and fluffy texture.
- Heat half a tablespoon of butter in a nonstick skillet over medium heat. Swirl to coat the pan evenly.
- Pour the egg mixture into the hot skillet. Let it cook undisturbed for about 2 minutes, or until the edges begin to set.
- Gently fold the omelette in half. Cook for another minute, or until the inside is just set.
- In the same skillet, melt the remaining butter. Add the asparagus and cherry tomatoes. Sauté the asparagus until tender-crisp and the tomatoes begin to blister.
- Serve the omelette immediately with the roasted asparagus and cherry tomatoes.
