  • Heat the remaining oil/ghee in the same pan. Add the onion paste, yogurt, and all the dry spices (cumin seeds, coriander powder, garam masala, fenugreek leaves, red chili powder, turmeric powder, salt). Sauté for 2-3 minutes until fragrant.

Cooking the Mutton

  • Add the cubed mutton to the gravy. Stir well to coat the meat with the spice mixture. Add 1/2 cup of water, bring to a boil, then reduce heat to low, cover, and simmer for approximately 45-60 minutes, or until the mutton is tender. Stir occasionally to prevent sticking.
