Ingredients
Mutton & Aromatics
- 500 gm Mutton cubed into 1-inch pieces
- 3 Onion finely diced
- 4 tbsp Ginger-Garlic Paste
- 2 Cardamom green cardamom, lightly crushed
- 2 Cloves
- 2 Bay Leaves
Spices & Seasoning
- 2 tbsp Cumin jeera
- 1 tbsp Coriander dhania
- 2 tbsp Garam Masala
- 1 tbsp Fenugreek kasuri methi
- 3 tbsp Chili Powder kashmiri chili powder (adjust to taste), red
- 1/2 tbsp Turmeric haldi
- 2 Chili finely sliced, green
- 1.5 tsp Salt or to taste
- 1 tbsp Sugar
Other Ingredients
- 6 tbsp Clarified Butter or ghee (refined oil)
- 1/4 cup Yogurt curd
- 2 tbsp Coriander chopped, for garnish
Instructions
Preparing the Onion Base
- Heat 2 tablespoons of oil/ghee in a pan. Add 1/2 tablespoon of sugar and sauté until it caramelizes slightly. Add the finely diced onions and fry until golden brown. Remove from heat and blend into a smooth paste.
Making the Spice Gravy
- Heat the remaining oil/ghee in the same pan. Add the onion paste, yogurt, and all the dry spices (cumin seeds, coriander powder, garam masala, fenugreek leaves, red chili powder, turmeric powder, salt). Sauté for 2-3 minutes until fragrant.
Cooking the Mutton
- Add the cubed mutton to the gravy. Stir well to coat the meat with the spice mixture. Add 1/2 cup of water, bring to a boil, then reduce heat to low, cover, and simmer for approximately 45-60 minutes, or until the mutton is tender. Stir occasionally to prevent sticking.
Finishing Touches
- Once the mutton is cooked, check seasoning and adjust salt as needed. Garnish with chopped fresh coriander leaves. Serve hot with rice or naan.
