Instructions

Prepare the Sabudana Paste

  • Grind the soaked and drained sabudana into a smooth paste. Combine the sabudana paste, chestnut flour, salt, and oil. Add water gradually to form a soft, pliable dough. Set aside.

Make the Momo Filling

  • Heat oil in a pan. Add the chopped carrots and sauté for 1 minute. Add the crumbled paneer, crushed peanuts, green chilies, coriander, salt, and white pepper. Mix well and cook until heated through. Remove from heat and let cool completely.

Assemble and Steam the Momos

  • Roll out small portions of the dough into thin circles. Place a spoonful of the filling in the center of each circle. Bring the edges together to form a half-moon shape, pleating as you go. Repeat with the remaining dough and filling.
  • Steam the momos in a steamer basket over boiling water for 15-20 minutes, or until cooked through.

Prepare the Chutney

  • Blend the tomatoes, red chilies, and salt into a smooth chutney. Adjust the consistency by adding a little water if needed.

Serve

  • Serve the hot, steamed momos with the spicy chutney.

Recipe Notes

Expert Tips for Perfect Fasting Momos

  • For a smoother sabudana paste, use a food processor or blender.
  • Adjust the amount of green chilies according to your spice preference.
  • Don't overfill the momos, as this can cause them to burst during steaming.
  • If you don't have paneer, you can substitute with potatoes or another fasting-friendly filling.
