  • 1/2 can (14 oz) Sweetened Milk condensed
  • 1/2 cup Milk

  • Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans. This ensures the cakes release easily after baking.
  • In a large bowl, sift together the all-purpose flour, granulated sugar, baking powder, and baking soda. Sifting aerates the dry ingredients, resulting in a lighter cake.
  • In a separate bowl, whisk together the milk, yogurt, oil, and rasmalai essence.
  • Gently fold the wet ingredients into the dry ingredients until just combined. Be careful not to overmix, as this can make the cake tough.
  • Divide the batter evenly between the prepared cake pans.
  • Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  • While the cakes are cooling, prepare the tres leches soak. In a bowl, combine the rasmalai milk, sweetened condensed milk, and whole milk.
  • Once the cakes are completely cool, use a fork or toothpick to poke holes all over the top. This allows the soak to penetrate the cake evenly.
  • Place one cake layer on a serving platter and pour half of the tres leches soak over it. Let it absorb for a few minutes.
  • Spread half of the whipped cream over the soaked cake layer and top with half of the chenna.
  • Place the second cake layer on top and repeat the soaking, whipped cream, and chenna layers.
  • Cover the entire cake with the remaining whipped cream and garnish with chopped nuts, if desired.
