- 5 tbsp Milk Powder or dough for dough
- 1 tbsp All-Purpose Flour
- 1 tbsp Flour or soya soya
- 1 Eggs well beaten
- 1/2 tsp Cardamom Powder elaichi
- 1 pinch Nutmeg
- 2 cup Milk for kheer
- 1 Bay Leaf tej patta
- 2 Cardamom elaichi, nos
- 2 tbsp Sugar
- 8 Cashews for garnish fried nos
- 1 tsp Pistachios
- 1.5 Saffron Strands threads
Instructions
Prepare the Egg Dough
- Combine milk powder, refined flour, all-purpose flour, and salt in a bowl. Gradually add beaten eggs, mixing well. Add water as needed to form a soft, slightly sticky dough.
Shape the Rasmalai
- Divide the dough into 15 equal portions. Roll each portion into a smooth oval ball.
Prepare the Kheer
- In a heavy-bottomed pan, bring the milk to a simmer over medium heat. Add sugar, cardamom powder, nutmeg, bay leaf, and crushed cardamom pods. Simmer gently, stirring occasionally, until the milk reduces slightly and thickens into a creamy consistency (about 20-25 minutes).
- Stir in saffron strands during the last 5 minutes of cooking.
Cook the Egg Rasmalai
- Carefully add the oval-shaped dough balls to the simmering kheer. Reduce the heat to low, cover, and cook for 3-4 minutes, allowing the balls to gently increase in size and become tender. Avoid boiling vigorously.
Garnish and Serve
- Remove the Egg Rasmalai from the kheer and gently drain excess liquid. Garnish generously with fried cashews and chopped pistachios.
