Ingredients
Meringue Base
- 2 Egg Whites
- ½ cup Sugar powdered
- ⅛ tsp Cream Of Tartar or an equal amount of salt if cream of tartar is unavailable
- ¼ tsp Vanilla Extract
Coloring
- Gel Food Coloring pink, and yellow recommended, blue
Instructions
- In a clean, dry bowl, whisk the egg whites until they become frothy.
- Add the cream of tartar (or salt). Continue whisking until soft peaks form. The cream of tartar stabilizes the egg whites and helps create a glossy meringue.
- Gradually add the powdered sugar, whisking constantly. Once all the sugar is incorporated, add the vanilla extract.
- Continue whisking until stiff, glossy peaks form. The meringue should hold its shape and be firm.
- Divide the meringue mixture into three separate bowls.
- Using toothpicks dipped in the gel food coloring, add a small amount of each color to a separate bowl of meringue. Gently swirl the color into the meringue, being careful not to overmix.
- Transfer each colored meringue to a piping bag fitted with a rose tip. If you don't have a rose tip, a plain round tip or even a zip-top bag with a corner snipped off will work.
- Line a baking sheet with parchment paper. Pipe small dollops of meringue onto the prepared baking sheet, leaving a little space between each.
- Bake in a preheated oven at 200°F (100°C) for 90 minutes. This low temperature dries out the meringues, creating a crisp texture.
- Turn off the oven and let the meringues cool completely inside the oven with the door slightly ajar. This prevents cracking.
