Instructions

Prepare the Vanilla Bean Mousse

  • Combine milk, sugar, and agar agar (bloomed in 1/2 cup of water) in a saucepan. Heat over medium heat, stirring constantly, until the sugar dissolves and the mixture comes to a simmer. Remove from heat and strain through a fine-mesh sieve.
  • Let the mixture cool slightly, then stir in the vanilla extract.
  • In a separate bowl, whip the heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the cooled milk mixture until fully combined.
  • Pour the mousse into individual serving dishes or a larger mold. Cover and refrigerate for at least 4 hours, or preferably overnight, to allow it to set.

Make the Strawberry Sauce

  • In a small saucepan, whisk together the cornstarch and cold water until smooth. Add the sliced strawberries and sugar. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a simmer.
  • Remove from heat and stir in the strawberry puree, lemon juice, and butter. Let the sauce cool completely.

Assemble and Serve

  • Carefully unmold the mousse from its container.
  • Spoon the strawberry sauce over the mousse. Garnish with whipped cream and fresh strawberries.
  • Serve immediately and enjoy!

Recipe Notes

Expert Tips for Perfect Mousse:

  • For the best results, use high-quality vanilla extract or a fresh vanilla bean for a more intense flavor.
  • Make sure your whipping cream is very cold before whipping it to achieve stiff peaks.
  • If you don’t have strawberry puree, you can easily make your own by blending fresh strawberries until smooth.
  • For a more elegant presentation, use a piping bag to decorate the mousse with whipped cream before adding the strawberry sauce.
