Ingredients
For the Vanilla Bean Mousse:
- 2 cup Milk
- 1/2 cup Water for blooming agar agar
- 8 tsp Sugar granulated
- 2 tbsp Agar Agar Powder
- 1 tsp Vanilla Extract or 1 vanilla bean, seeds scraped
- 2 cup Heavy Whipping Cream cold
For the Strawberry Sauce:
- 1 cup Strawberries fresh, hulled and sliced
- 1/2 cup Strawberry Puree
- 1 tbsp Corn Flour
- 1/4 cup Water cold
- 4 tsp Sugar granulated
- 1/4 tsp Lemon Juice
- 1/2 tsp Butter unsalted
For Garnish:
- 1/2 cup Heavy Whipping Cream whipped
- 1/2 cup Strawberries fresh, sliced
Instructions
Prepare the Vanilla Bean Mousse
- Combine milk, sugar, and agar agar (bloomed in 1/2 cup of water) in a saucepan. Heat over medium heat, stirring constantly, until the sugar dissolves and the mixture comes to a simmer. Remove from heat and strain through a fine-mesh sieve.
- Let the mixture cool slightly, then stir in the vanilla extract.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cooled milk mixture until fully combined.
- Pour the mousse into individual serving dishes or a larger mold. Cover and refrigerate for at least 4 hours, or preferably overnight, to allow it to set.
