Ingredients
For the Vanilla Loaf
- 1/4 cup Vegetable Oil
- 1/2 cup Sugar granulated
- 1 1/2 cup Whole Wheat Flour whole
- 1/4 cup Yogurt or curd
- 1 tsp Baking Powder
- 1/8 tsp Salt
- 1/4 cup Milk
- 1 tsp Vanilla Extract
For the Caramel Sauce
- 150 grams Sugar brown
- 50 grams Butter unsalted
- 1/4 cup Heavy Cream
For the Chocolate Coating
- 500 grams Milk Chocolate compound chocolate can be used
Instructions
Prepare the Vanilla Loaf
- Preheat oven to 350°F (175°C). Grease and flour a 9x3 inch loaf pan.
- Sift together whole wheat flour, baking powder, and salt.
- In a separate bowl, whisk together milk and vanilla extract.
- In a mixing bowl, cream together oil and sugar until light and fluffy. Add yogurt and mix well.
- Gradually add the dry ingredients and the milk mixture alternately to the wet ingredients, beginning and ending with the dry ingredients. Mix until just combined.
- Pour batter into the prepared loaf pan and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Once cooled, wrap tightly in cling film and freeze for at least 1 hour.
Make the Caramel Sauce
- In a heavy-bottomed saucepan over medium heat, add brown sugar. Use the handle of the pan to stir constantly, preventing burning. Avoid using a spoon or spatula. Remove from heat frequently to prevent burning. Continue until the sugar is completely melted and a rich caramel color is achieved.
- Remove from heat and carefully add heavy cream in a slow, steady stream, whisking constantly to prevent splattering and crystallization.
- Stir in the butter until melted and smooth. Return to the stovetop and cook for 4-6 minutes, stirring frequently, until the sauce thickens slightly. Remove from heat and let cool completely.
Assemble the Cake
- Line a 9x3 inch loaf pan with parchment paper, leaving an overhang on the sides for easy lifting.
- Remove the frozen vanilla loaf from the freezer and place it in the prepared loaf pan.
- Pour the cooled caramel sauce evenly over the top of the cake, spreading it with a spatula. Freeze for at least 1 hour.
- Remove from the freezer and let sit at room temperature for 10-15 minutes to slightly soften.
- Melt the milk chocolate in a double boiler or microwave until smooth. Let cool slightly.
- Place the cake on a wire rack set over a baking sheet or plate to catch any drips. Pour the melted chocolate over the top and sides of the cake, allowing it to coat evenly. Let the chocolate set completely before slicing and serving.
Recipe Notes
Expert Tips for Eggless Twix Cake Success
- For a richer caramel flavor, use dark brown sugar instead of light brown sugar.
- Don't overheat the caramel sauce, as this can cause it to burn and crystallize. Remove from heat frequently and stir gently.
- If your caramel sauce becomes too thick, stir in a teaspoon of hot water or cream to thin it out.
- To make the chocolate coating extra glossy, temper the chocolate before pouring it over the cake. This involves carefully melting the chocolate and then cooling it to a specific temperature to create a stable, shiny finish.
