  • Finely chop the cashews and pistachios. Set aside.
  • In a large, thick-bottomed pan or pot, combine the shredded carrots, coconut milk, and water. Over medium heat, bring the mixture to a gentle simmer.
  • Continue to simmer, stirring occasionally, until the mixture reduces and thickens slightly. This concentrates the carrot flavor and helps create a creamy texture.
  • Add the sugar, ground cardamom, chopped pistachios, and cashews to the carrot mixture. Stir well to combine.
  • Continue simmering the mixture, stirring regularly, until it thickens considerably. The halwa is ready when it coats the back of a spoon.
  • Remove the pan from the heat and let the carrot halwa cool completely. This is crucial for preventing ice crystals from forming in the ice cream.
  • Once cooled, transfer the carrot halwa to a freezer-safe container. Press a piece of parchment paper directly onto the surface of the halwa to prevent freezer burn. Seal the container with a lid.
  • Freeze the carrot halwa for at least 4 hours, or preferably overnight, until it becomes firm.
  • When ready to serve, let the ice cream sit at room temperature for a few minutes to soften slightly. Scoop the ice cream into bowls and serve immediately. Enjoy!
