Ingredients
- 1 ½ cup All-Purpose Flour
- ½ cup Whole Wheat Flour whole
- 1-2 tsp Salt or as per taste
- 1 ½ tbsp Olive Oil and 1 ½ tbsp more
- ½ tsp Ginger grated
- 2 cup Pasta Sauce
- 2 cup Spinach chopped
- 1/3 cup Cottage Cheese mashed
- 2 Onion chopped
- 1 tsp Pepper black, or to taste
- 2-3 Thyme
Instructions
Prepare the Dough
- Combine all-purpose flour, whole wheat flour, salt, and olive oil in a large bowl. Gradually add water, mixing until a soft, slightly sticky dough forms. Knead for 5-7 minutes until smooth. Cover and let rest for at least 30 minutes.
Make the Filling
- Heat 1 tablespoon olive oil in a pan. Add grated ginger and saute for 30 seconds. Add chopped onions and saute until translucent. Add spinach and cook until wilted. Stir in mashed cottage cheese, salt, pepper, and thyme. Cook for another 2 minutes.
Assemble the Ravioli
- On a lightly floured surface, roll out half of the dough into a thin sheet. Use a ravioli cutter or a knife to cut out circles. Place a spoonful of filling in the center of each circle. Brush the edges with water, fold over to form a half-moon shape, and crimp the edges with a fork.
- Repeat with the remaining dough.
Cook the Ravioli
- Bring a large pot of salted water to a boil. Add a little olive oil to prevent sticking. Gently add the ravioli and cook for 2-3 minutes, or until they float to the surface and are cooked through.
