Ingredients

- 500 gm Potato russet or starchy potatoes recommended
- 1 Onion finely chopped
- 2 Chili adjust to taste, finely chopped, green
- 1 Ginger finely chopped
- 4 clove Garlic finely chopped
- 2 tbsp Chili Powder red
- 1 tbsp Garam Masala
- 1 tbsp Pepper black, ground
- 1.5 tsp Salt adjust to taste
- 1/2 cup Peas cooked, green
For the Coating
- 200 gm Vermicelli thin vermicelli
- 1 cup All-Purpose Flour for binding
- 1/2 cup Water for flour slurry
For Serving
- Vegetable Oil for deep frying
- Tomato Sauce
Instructions
Prepare the Potato Filling
- Boil potatoes until tender. Mash well and mix with salt, red chili powder, garam masala, black pepper.
- Sauté finely chopped onions, ginger, and garlic until softened. Add to the mashed potato mixture.
Shape the Cutlets
- Form the potato mixture into small balls. Flatten each ball into a patty.
- Make a small indentation in the center of each patty.
Coat and Fry
- In a bowl, whisk together all-purpose flour and water to create a smooth slurry.
- Dip each patty into the flour slurry.
- Lightly crush the vermicelli. Roll each patty in the crushed vermicelli, ensuring it's fully coated.
- Deep fry the patties in hot oil until golden brown and crispy.
Assemble the Bird's Nest
