For the Potato Filling

  • 500 gm Potato russet or starchy potatoes recommended
  • 1 Onion finely chopped
  • 2 Chili adjust to taste, finely chopped, green
  • 1 Ginger finely chopped
  • 4 clove Garlic finely chopped
  • 2 tbsp Chili Powder red
  • 1 tbsp Garam Masala
  • 1 tbsp Pepper black, ground
  • 1.5 tsp Salt adjust to taste
  • 1/2 cup Peas cooked, green

Prepare the Potato Filling

  • Boil potatoes until tender. Mash well and mix with salt, red chili powder, garam masala, black pepper.
  • Sauté finely chopped onions, ginger, and garlic until softened. Add to the mashed potato mixture.

Shape the Cutlets

  • Form the potato mixture into small balls. Flatten each ball into a patty.
  • Make a small indentation in the center of each patty.

Coat and Fry

  • In a bowl, whisk together all-purpose flour and water to create a smooth slurry.
  • Dip each patty into the flour slurry.
  • Lightly crush the vermicelli. Roll each patty in the crushed vermicelli, ensuring it's fully coated.
  • Deep fry the patties in hot oil until golden brown and crispy.

Assemble the Bird's Nest

  • Place a spoonful of cooked green peas into the center indentation of each fried patty.
