Filling

  • 1 Tomato large, sliced
  • 3/4 cup Spinach fresh, roughly chopped
  • 4 Eggs large
  • 1 tsp Herbs italian mix, dried, or your preference (e.g., oregano, thyme)
  • 1/2 tsp Salt or to taste
  • 1/4 tsp Pepper black, freshly ground, or to taste
  • 1 tbsp Olive Oil or other cooking oil

Prepare the Filling

  • Wash and roughly chop the spinach. Slice the tomato into medium-thick rounds. In a small bowl, gently toss the spinach with 1/2 teaspoon salt, 1/4 tsp black pepper, and 1 tbsp olive oil.

Assemble the Tarts

  • Preheat oven to 400°F (200°C). Thaw the puff pastry sheet completely. Cut the puff pastry sheet into 4 equal-sized squares. Place each square onto a baking sheet lined with parchment paper. Create a 1cm border on each square, pressing the edges gently to seal.

Bake the Tarts

  • Spread the spinach mixture evenly over the puff pastry squares, leaving the border. Top with tomato slices. Sprinkle with dried herbs and a pinch of salt. Bake for 5-7 minutes.

Add the Eggs

  • Carefully crack an egg onto the center of each tart. Sprinkle with a little more salt and herbs (optional: grated cheese for children).

Finish Baking

  • Return the tarts to the oven and bake for another 7-8 minutes, or until the egg whites are fully set and the pastry is golden brown.

Serve

  • Serve the tarts hot and enjoy! They pair perfectly with coffee, tea, or juice.
