Prepare the Dry Fruits

  • Sauté almonds, cashews, and watermelon seeds in 2 tablespoons of ghee until lightly browned. Set aside.

Roast the Lotus Seeds

  • In the same pan, add another 2 tablespoons of ghee and roast the puffed lotus seeds for 5-7 minutes until fragrant and lightly golden. Set aside.

Coarsely Grind the Dry Fruits and Seeds

  • Coarsely grind the sautéed almonds, cashews, watermelon seeds, and roasted lotus seeds in a food processor. Set aside.

Roast the Flour

  • In the same pan, add the remaining 1 cup of ghee and add the whole wheat flour. Roast over low heat for 25-30 minutes, stirring constantly, until the flour turns a deep golden brown and a nutty aroma develops.

Add Spices and Remaining Ingredients

  • Add the cardamom powder, coarsely chopped pistachios and melon seeds to the roasted flour. Roast for another 5 minutes, stirring constantly.

Combine and Finish

  • Add the ground dry fruit and seed mixture to the roasted flour. Stir well to combine and cook for another 5-7 minutes.

Add Sugar and Cool

  • Remove from heat, stir in the sugar, and continue stirring for 2-4 minutes until the sugar dissolves and the mixture is evenly coated. Allow the mixture to cool completely.

Store and Enjoy

  • Store the cooled Panjiri in an airtight container. Enjoy!

  • Use good quality desi ghee (clarified butter) for the best flavor and aroma.
