Ingredients
For the Fritters
- 1 bunch Drumstick Leaves sajne pata / sahjan ke patte; about 1 cup packed
- 3-4 Chilies finely chopped, green
- 1/2 cup All-Purpose Flour
- 1 tsp Salt or to taste
- 1/4 tsp Turmeric Powder optional, for color and flavor
For Frying
- 2 cup Vegetable Oil or enough for deep frying
Instructions
Prepare the Drumstick Leaves
- Separate the drumstick leaves from their stems. Wash them thoroughly under cold running water and pat them dry with a clean kitchen towel.
Make the Fritter Batter
- In a large bowl, combine the washed and dried drumstick leaves, chopped green chilies, salt, and all-purpose flour. If using, add turmeric powder.
Mix and Shape
- Gently mix everything together using your hands until a slightly coarse batter forms. Do not overmix. Pinch off small portions of the batter and shape them into small, flat fritters.
Fry the Pakodas
- Heat the vegetable oil in a deep frying pan or kadai over medium heat. Once the oil is hot (a small piece of batter should sizzle immediately), carefully add the fritters in batches, ensuring not to overcrowd the pan.
- Fry the pakodas until they are golden brown and crispy, flipping them halfway through for even cooking. Remove the fried pakodas from the oil and place them on a paper towel-lined plate to drain excess oil.
Serve and Enjoy
- Serve the crispy drumstick leaves pakodas hot as a delicious and healthy snack or side dish. Enjoy!
Recipe Notes
Expert Tips for Perfect Sajne Pata Pakoda
- For extra crispy pakodas, let the batter rest for 10-15 minutes after mixing. This allows the flour to hydrate, resulting in a crispier texture.
- Adjust the amount of green chilies according to your spice preference. If you prefer a milder flavor, use fewer chilies.
- Don't overcrowd the pan while frying. This will lower the oil temperature and result in soggy pakodas. Fry in batches for best results.
- Serve immediately for the best taste and texture. These pakodas are best enjoyed fresh and hot.
