Ingredients
For the Dhebra
- 1 cup Bajra Flour
- 1 cup Whole Wheat Flour whole
- 1 cup Water as needed for dough consistency
- 1 bunch Fenugreek Leaves methi, fresh
- 1/2 cup Coriander dhania
- 2 Chilies finely chopped, green, or 1 tbsp garlic paste
- 1.5 tsp Salt or to taste
- 2 tbsp Oil for the dough
- 1/2 tsp Turmeric Powder haldi
- 2 tbsp Sugar powdered
- 1 tbsp Sesame Seeds
- 2 tbsp Oil for shallow frying
For the Filling
- 1 cup Hung Yogurt
- 2 tbsp Pomegranate Seeds
- 1 tbsp Mint Chutney or coriander chutney
- 1 tbsp Paprika Chutney or garlic chutney
- 2 tbsp Peanuts crushed, roasted
- 2 tbsp Chickpea Noodle
Instructions
Prepare the Dhebra
- Mix bajra and whole wheat flours in a bowl. Add oil, salt, turmeric powder, sugar, and sesame seeds. Mix well. Add finely chopped green chilies (or garlic paste), fresh fenugreek leaves, and coriander leaves. Gradually add water and knead into a soft, pliable dough, similar in consistency to chapatti dough.
Prepare the Curd Mixtures
- Divide the hung curd into three equal portions. In the first portion, mix in the mint chutney. In the second portion, mix in the paprika chutney. Leave the third portion plain.
Cook the Dhebra
- Roll small portions of the dough into thin, square shapes, like bread slices. Shallow fry the dhebra on both sides in a lightly oiled pan until golden brown and cooked through.
Assemble the Sandwich
- Take one dhebra square and spread a layer of the mint chutney curd mixture on it. Top with a layer of crushed peanuts. Add another dhebra and spread the paprika chutney curd mixture. Add a layer of sev. Add another dhebra and spread the plain hung curd. Sprinkle with pomegranate seeds. Top with a final dhebra square. Garnish with a dollop of plain hung curd and sev. Add fresh coriander leaves for added freshness.
