Ingredients
- 1 bowl Sprouts mix
- 1 Cucumber chopped
- 1 Tomato chopped
- 2 Spring Onions chopped
- 2 Chilli chopped, green
- 2 tbsp Peanuts roasted and crushed
- 2 tbsp Lemon Juice
- Lettuce iceberg
- 1.5 tsp Salt or as per taste
- 1.5 leaves Curry Leaves
- 1 tsp Mustard Seeds
- 1 pinch Asafoetida hing
- 1 tsp Oil
Instructions
Prepare the Sprouts
- Cook the sprouts in ¾ cup of water for 5-6 minutes, or until the water evaporates. Set aside to cool.
Roast and Crush Peanuts
- Roast the peanuts in a dry pan until fragrant and lightly browned. Let cool completely, then crush coarsely.
Make the Tempering
- Heat the oil in a small pan. Add mustard seeds; once they splutter, add asafoetida (if using) and curry leaves. Sauté briefly until fragrant.
Assemble the Salad
- In a large bowl, combine the cooked sprouts, chopped cucumber, tomato, spring onions, green chili, and lettuce.
Combine and Serve
- Pour the tempering over the salad. Add the crushed peanuts, lemon juice, and salt. Toss gently to combine. Serve immediately or chill for later.
