  • Cook the sprouts in ¾ cup of water for 5-6 minutes, or until the water evaporates. Set aside to cool.

Roast and Crush Peanuts

  • Roast the peanuts in a dry pan until fragrant and lightly browned. Let cool completely, then crush coarsely.

Make the Tempering

  • Heat the oil in a small pan. Add mustard seeds; once they splutter, add asafoetida (if using) and curry leaves. Sauté briefly until fragrant.

Assemble the Salad

  • In a large bowl, combine the cooked sprouts, chopped cucumber, tomato, spring onions, green chili, and lettuce.

Combine and Serve

  • Pour the tempering over the salad. Add the crushed peanuts, lemon juice, and salt. Toss gently to combine. Serve immediately or chill for later.
