Ingredients
Dal & Spices
- 1 cup Gram also known as dhuli urad ki dal. ensure the lentils are split and skinned., black, split black lentils
- 3 cup Water
- 1.5 tsp Salt adjust to taste
- 1 tsp Turmeric powder, also known as haldi
- 1 tsp Chili Powder adjust to your spice preference, red
- 2 piece Cardamom also known as badi elaichi, black
- 4 piece Cloves also known as lavang
- 1 tsp Cumin seeds, also known as jeera
Aromatics & Tempering
- 2 tbsp Onion also known as pyaz, finely chopped
- 4 piece Chili also known as lal mirch, red, whole dry red chilies
- 1 tbsp Onion also known as patli kati pyaz, thinly sliced
- 1 tbsp Asafoetida hing
Fat
- 3 tbsp Clarified Butter ghee, also known as desi ghee
Instructions
Prepare the Dal
- Wash and rinse the urad dal thoroughly. Soak for at least 5 minutes.
- Add the soaked dal to a pot with 3 cups of water. Bring to a boil, then reduce heat and simmer until the dal is tender but not mushy. About 20-25 mins.
- Remove any foam or impurities from the surface.
- Stir in the turmeric powder, salt, and red chili powder. Simmer for another 5 minutes.
Make the Tempering
- While the dal simmers, prepare the tempering. Gently crush the black cardamom and cloves using a mortar and pestle or the back of a spoon.
- Heat the ghee in a small pan over medium heat. Add the cumin seeds and let them splutter.
- Add the finely chopped onion and sauté until golden brown.
- Add the whole red chilies and sauté for a minute until fragrant.
- Remove from heat and stir in the crushed black cardamom, cloves, and asafoetida.
Combine & Serve
- Gently pour the tempering into the cooked dal. Stir well to combine.
- Serve hot with chapati, roti, or rice. Garnish with cilantro (optional).
