About Delicious Almond Cake Recipe: High-Protein Festive Treat

A treasured family recipe passed down, this Almond Cake (Badam Cake) is a delightful blend of simple ingredients and festive flavors. Years ago, I received this recipe from my sister-in-law, Lakshmi, and it has become a holiday favorite.
This isn't your average holiday cake; it's packed with protein thanks to the addition of almond flour. The soft, slightly crunchy almond texture beautifully complements the tender crumbly cake, creating a truly satisfying dessert experience.
Easy to make and perfect for boosting your protein intake during the holiday season, this cake is sure to become a new tradition.

Instructions

Prepare the Almond Flour

  • Grind 1/4 cup of whole almonds into a fine powder using a blender.

Combine Dry Ingredients

  • In a large bowl, combine the almond flour, all-purpose flour, baking powder, baking soda, and cardamom powder (if using). Mix well.

Combine Wet Ingredients

  • In a separate bowl, whisk together the clarified butter, milk, powdered sugar, and vanilla extract (or cardamom powder).

Combine Wet and Dry Ingredients

  • Gradually add the wet ingredients to the dry ingredients, mixing gently until just combined. Do not overmix. The batter should be slightly thick but pourable.

Bake the Cake

  • Preheat your oven to 175°C (350°F). Grease and flour an 8-inch cake tin. Pour the batter into the prepared tin.
  • Bake for 20-30 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Serve

  • Let the cake cool completely in the tin before serving. Garnish with whole almonds (optional). Enjoy!

Recipe Notes

Expert Tips for the Perfect Almond Cake

  • For a richer flavor, use high-quality clarified butter (ghee).
  • Don't overmix the batter; overmixing can result in a tough cake.
  • Check for doneness with a toothpick; if it comes out with wet batter, bake for a few more minutes.
  • Let the cake cool completely before serving to allow the flavors to develop and the cake to set properly.
