Ingredients
Chocolate Mixture
- 115 gm Butter unsalted
- 150 gm Compound Chocolate chopped, dark
- 80 gm Milk Chocolate chopped
Wet Ingredients
- 3 Large Eggs
- 1 tbsp Blackstrap Molasses
- 1 tsp Vanilla Extract
Dry Ingredients
- 80 gm All-Purpose Flour
- 1 tsp Baking Powder
- 1/8 tsp Salt or to taste
Topping and Baking
- 75 gm Walnuts chopped and roasted
- Cream for serving, optional, whipped
- Parchment Paper for lining the baking tin
Instructions
- Melt the unsalted butter, dark compound chocolate, and milk chocolate together in a double boiler or in the microwave. If using a microwave, heat in short bursts, stirring frequently, to prevent burning.
- In a large bowl, whisk the eggs and vanilla extract until light and fluffy. This incorporates air for a tender brownie.
- Add the blackstrap molasses to the egg mixture and whisk until just combined. Since compound chocolate contains sugar, taste the batter and adjust the molasses if needed.
- Gently fold the melted chocolate mixture into the egg mixture until just combined. Be careful not to overmix.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, folding gently until just combined. Overmixing will result in tough brownies.
- Line a baking tin with parchment paper, leaving an overhang on the sides for easy removal. Grease the parchment paper with butter.
- Preheat oven to 180°C (350°F) for 15 minutes. Pour the brownie batter into the prepared tin and sprinkle with the chopped, roasted walnuts.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached. Avoid overbaking for fudgy brownies.
- Let the brownies cool completely in the tin before cutting into squares. For cleaner cuts, chill the brownies in the refrigerator for at least 30 minutes before slicing.
- Serve the brownies with a dollop of whipped cream, if desired.
Recipe Notes
Good To Know
- For extra crunch and a touch of saltiness, sprinkle a handful of roasted chopped pecans or walnuts and a pinch of flaky sea salt over the brownie batter just before baking.
- If you prefer ultra-fudgy brownies, slightly underbake them by 2–3 minutes; for a more cake-like texture, extend baking time by 3–5 minutes and test with a skewer for doneness.
- To enhance the complex molasses flavor, swirl a tablespoon of blackstrap molasses into the batter just before baking, creating attractive ribbons and intensified taste in every bite.
Expert Tips
- Use high-quality cocoa powder for the richest chocolate flavor. Dutch-processed cocoa powder will yield a fudgier brownie.
- Don't overmix the batter. Overmixing develops gluten and can result in tough brownies.
- Line your baking pan with parchment paper, leaving an overhang on the sides. This will make it easy to lift the brownies out of the pan and cut them neatly.
Storage Instructions
- These brownies store exceptionally well—wrap individual squares tightly and freeze for up to a month.
- Thaw at room temperature or microwave for 15–20 seconds for a warm, gooey snack.
