  • 2 tbsp Chocolate for garnish, grated, white

Prepare the Chocolate

  • Melt the grated dark chocolate in a double boiler or microwave (30-60 seconds, or until melted).

Make the Batter

  • In a large bowl, whisk together the whole wheat flour, rice flour, and salt. Add the melted chocolate and vanilla extract. Gradually whisk in the milk until a smooth batter forms. Add water, a little at a time, until you reach a dosa-like consistency (slightly thinner than pancake batter). Let the batter rest for 15-20 minutes.

Cook the Dosas

  • Heat a non-stick dosa pan or tawa over medium heat. Pour a ladleful of batter onto the hot pan and spread it thinly in a circular motion, like a crepe. Add a teaspoon of butter to the top of the dosa.
  • Cook for 1-2 minutes, or until the edges start to brown and the top looks set. Flip and cook the other side for another 1-2 minutes.

Garnish and Serve

  • Garnish your chocolate dosa with grated white chocolate and serve immediately. Repeat with the remaining batter.
