Ingredients
 

For the Dosa Batter (Prepare ahead or use store-bought)

For the Vegetable Filling

  • 1 Large Onion finely chopped
  • 1 Tomato finely chopped
  • 1 Carrot grated
  • 2 Bell Peppers 1/2 inch thick rings, capsicum, plus some thinly sliced for garnish; you can use different colored peppers for visual appeal
  • 1/2 cup Corn boiled or canned, sweet
  • 1 tbsp Coriander chopped, fresh
  • 1 tsp Chili Flakes or to taste
  • 1 tsp Salt or to taste

For Cooking

  • 2 tbsp Oil vegetable or coconut oil

Instructions
 

Prepare the Vegetable Filling

  • Combine the chopped onion, tomato, grated carrot, bell pepper slices (reserve some rings for topping), sweet corn, coriander, chili flakes, and salt in a bowl. Mix well.

Make the Dosa

  • In a separate bowl, combine the dosa batter and salt. Mix thoroughly.

Cook the Dosa

  • Heat a non-stick tawa (griddle) over medium heat. Lightly oil the tawa.
  • Place a capsicum ring on the hot tawa. Pour a ladleful of dosa batter over the ring, spreading it thinly to form a circle.
  • Sprinkle some of the prepared vegetable mixture and chili flakes over the dosa.
  • Drizzle oil around the edges of the dosa.
  • Cover and cook for 2-3 minutes, or until the bottom is golden brown and crispy.
  • Carefully flip the dosa and cook for another 1-2 minutes on the other side, until lightly golden.

Serve

  • Remove from the tawa and serve hot with your favorite chutney or sambar. Garnish with remaining bell pepper rings and coriander leaves.
