Ingredients
Filling
- 1/4 cup cup Cream cheese
- 1/4 cup cup Spinach chopped
- 1 tbsp tbsp Jalapeño pepper finely chopped (or a milder pepper)
- 1 tbsp tbsp Coriander freshly chopped
- 1 1/2 tsp tsp Salt or to taste
- 1 tsp tsp Pepper black, freshly ground
Onion Rings
- 1 Onion large, white
Breading
- 1 cup cup All-purpose flour
- 1 tsp tsp Garlic powder
- 1/2 tsp tsp Chili flakes (optional)
- 1 tsp tsp Oregano dried
- 1 cup cup Breadcrumb
- 2 tbsp tbsp Flaxseed meal
- 1/4 cup cup Water or as needed
Frying
- Oil for frying
Instructions
- In a pan over medium heat, sauté the chopped spinach until wilted and any excess moisture evaporates. This helps the filling bind well and prevents the onion rings from becoming soggy.
- In a bowl, combine the cream cheese, wilted spinach, jalapeño, cilantro, salt, and pepper. Mix thoroughly and refrigerate for at least 10 minutes to allow the flavors to meld and the filling to firm up.
- Cut the onion into thick slices, about 1/2-inch thick. Carefully separate the rings and arrange them on a baking sheet.
- Fill each onion ring generously with the chilled cream cheese mixture. Refrigerate the filled onion rings for another 10-15 minutes to help them hold their shape during frying.
- In a small bowl, combine the flaxseed meal and water. Let it sit for a few minutes until it thickens into a gel-like consistency. This acts as a vegan egg wash, helping the breading adhere to the onion rings.
- In a separate shallow dish, combine the all-purpose flour, garlic powder, chili flakes (if using), dried oregano, salt, and pepper.
- In another shallow dish, place the breadcrumbs.
- Take each filled onion ring and dredge it in the flour mixture, ensuring it’s fully coated. Then, dip it into the flaxseed gel, letting any excess drip off. Finally, coat the ring thoroughly with breadcrumbs, pressing gently to ensure they adhere.
- Heat the oil in a large skillet over medium-high heat. Once hot (a breadcrumb should sizzle gently when dropped in), carefully place a few onion rings in the oil, ensuring not to overcrowd the pan.
- Fry the onion rings for 2-3 minutes per side, or until golden brown and crispy. Frying in batches ensures even cooking and prevents the oil temperature from dropping too low.
- Remove the cooked onion rings from the skillet and place them on a wire rack or paper towel-lined plate to drain excess oil.
- Serve the crispy spinach and cream cheese stuffed onion rings immediately while hot. Enjoy!
Recipe Notes
Good To Know
- For an extra-crispy coating, double-dip the filled onion rings: dredge them in flour, then beaten egg, and finally in seasoned breadcrumbs before frying or baking.
- If preparing in advance, assemble and fill the onion rings, then freeze them on a baking sheet. Cook directly from frozen, adding a few extra minutes to the cooking time.
- For a lighter filling, use whipped cream cheese or a half-and-half blend of Greek yogurt and cream cheese.
- Add finely chopped sun-dried tomatoes or roasted red peppers to the filling for a sweet and tangy twist.
Expert Tips
- Ensure the onion rings are evenly coated to prevent burning and ensure a consistent texture.
- Monitor the cooking process closely, as cooking times may vary depending on the size of the onion rings and the cooking method.
- Serve the filled onion rings immediately after cooking for the best flavor and texture.
Storage Instructions
- Store leftover filled onion rings in an airtight container in the refrigerator for up to 3 days. Reheat in a preheated oven or air fryer until warmed through.
