Ingredients
For the Eggplant Rings:
- 2 Eggplant also known as brinjal; choose firm, medium-sized eggplants
- 1 tsp Salt for eggplant
- 1/4 tsp Chili Powder red
For the Stuffing:
- 100 gm Cottage Cheese indian cottage cheese; crumbled
- 1 medium Potato boiled and mashed
- 1 Chili finely chopped, green
- 1/4 cup Coriander fresh, chopped; also known as cilantro
- 1/8 tsp Chili Powder red
- 1/8 tsp Garam Masala
- 1/2 tsp Salt to taste
For Frying and Serving:
- 2 tbsp All-Purpose Flour
- 2 tbsp Vegetable Oil for frying
- 2 tbsp Tomato Chutney
- 3 tbsp Yogurt plain, hung curd or greek yogurt
Instructions
Prepare the Eggplant
- Wash and dry the eggplants. Slice into 1 1/2-inch thick rings. Carefully scoop out the inner flesh of each ring, leaving a ring-like shape. Lightly sprinkle salt and red chili powder on the eggplant rings and set aside for 10 minutes to reduce moisture.
Prepare the Stuffing
- In a bowl, combine the crumbled paneer, mashed potatoes, green chilies, coriander, red chili powder, garam masala, and salt. Mix well.
Stuff and Fry the Eggplant Rings
- Fill each eggplant ring generously with the prepared stuffing. Dust both sides of the stuffed rings with all-purpose flour. Heat the vegetable oil in a non-stick pan. Carefully place the eggplant rings in the hot oil and fry until golden brown and cooked through, flipping halfway. Cover the pan occasionally to ensure even cooking.
