Ingredients
Weetbix & Nuts
Spices & Aromatics
- 1 sprig Curry Leaf
- ½ tbsp Chili Powder
- ¼ tsp Turmeric Powder
- Salt to taste
- ⅛ tsp Asafoetida
Oil
- 3 tsp Oil
Instructions
- Roughly crush the Weetbix into smaller pieces. Dry roast the peanuts until fragrant and remove their skins.
- Heat 2 teaspoons of oil in a non-stick pan. Add the curry leaves and sauté until crispy and fragrant. This infuses the oil with flavor.
- Add the roasted gram to the pan and cook until golden brown, stirring frequently to ensure even toasting.
- Add the roasted peanuts to the pan and remove it from the heat. The residual heat will warm the peanuts through.
- In a separate small pan (a tadka pan is ideal), heat the remaining 1 teaspoon of oil. Add the asafoetida and let it sizzle for a few seconds to release its aroma.
- Add the turmeric powder, chili powder, and salt to the small pan. Sauté briefly until fragrant, being careful not to burn the spices.
- Pour the spice mixture from the small pan into the larger pan with the roasted gram and peanuts. Mix well to combine.
- Return the large pan to medium heat. Add the crushed Weetbix and mix thoroughly, ensuring all the pieces are coated with the spices and oil.
- Cook for about 4 minutes, stirring frequently, until the Weetbix is crispy and golden brown. Transfer the mixture to a plate to cool completely. This prevents the snack mix from steaming and becoming soggy.
- Once cooled, store the Weetbix snack mix in an airtight container to maintain its crispness.
