- Cover and refrigerate for at least 1 hour, or overnight, until completely firm.
- Lift the chilled rice from the pan and cut it into 8 equal rectangles.
- Heat the neutral oil in a large nonstick skillet over medium heat.
- Fry the rice pieces for 3 to 4 minutes on each side, until deeply golden and crispy.
- Transfer the crispy rice to a wire rack or paper towel-lined plate.
- Place the drained tuna in a bowl.
- Add the mayonnaise, sriracha, sesame oil, white sesame seeds, and black sesame seeds.
- Mix until creamy and evenly combined.
- Place thin avocado slices over each crispy rice piece.
- Spoon the spicy tuna mixture over the avocado.
- Garnish with jalapeño, black sesame seeds, and additional sriracha.
- Serve immediately while the rice is still crispy.
Recipe Notes
- Use short-grain or sushi rice because its sticky texture helps the pieces hold together.
- Press the warm rice firmly and chill it completely before cutting.
- Do not turn the rice too early; wait until a golden crust forms.
- Drain the tuna well and assemble the bites immediately before serving so the rice stays crispy.
