  • Line an 8-inch square pan with parchment paper.
  • Press the warm cooked rice firmly into an even layer about 1/2 inch thick.
  • Cover and refrigerate for at least 1 hour, or overnight, until completely firm.
  • Lift the chilled rice from the pan and cut it into 8 equal rectangles.
  • Heat the neutral oil in a large nonstick skillet over medium heat.
  • Fry the rice pieces for 3 to 4 minutes on each side, until deeply golden and crispy.
  • Transfer the crispy rice to a wire rack or paper towel-lined plate.
  • Place the drained tuna in a bowl.
  • Add the mayonnaise, sriracha, sesame oil, white sesame seeds, and black sesame seeds.
  • Mix until creamy and evenly combined.
  • Place thin avocado slices over each crispy rice piece.
  • Spoon the spicy tuna mixture over the avocado.
  • Garnish with jalapeño, black sesame seeds, and additional sriracha.
  • Serve immediately while the rice is still crispy.

Recipe Notes

  • Use short-grain or sushi rice because its sticky texture helps the pieces hold together.
  • Press the warm rice firmly and chill it completely before cutting.
  • Do not turn the rice too early; wait until a golden crust forms.
  • Drain the tuna well and assemble the bites immediately before serving so the rice stays crispy.
