- 1 cup All-Purpose Flour maida
- 1 ½ tsp Salt or to taste
- 1 tbsp Oil
- ¼ cup Water or as needed

- 1 cup Potato boiled and mashed, mashed
- 1 ½ tsp Salt or to taste
- ¼ tsp Pepper Powder white
- ½ tsp Chili chopped, green
- 2 tbsp Coriander dhania, chopped, fresh

- In a large bowl, combine the all-purpose flour, salt, and oil. Mix well.
- Gradually add water while mixing to form a soft, pliable dough. Knead for a few minutes until smooth. This develops the gluten for a flaky texture.
- Cover the dough and let it rest for 30 minutes. This allows the gluten to relax, making the dough easier to work with.
- In another bowl, prepare the filling by combining the mashed potato, salt, white pepper powder, chopped green chili, and chopped coriander leaves. Mix thoroughly.
- Divide the dough into small, equal-sized balls.
- Flatten each dough ball slightly. Place a spoonful of the potato filling in the center.
- Bring the edges of the dough together to enclose the filling completely, forming a ball. Seal tightly to prevent leakage during frying.
