Prepare the Vegetables
- Finely chop the onion. Grate the carrot and beetroot. Shred the cabbage. Deseed and finely chop the tomato. Dice the mango into small pieces.
Combine Ingredients
- In a large bowl, combine the chopped onion, grated carrot, grated beetroot, shredded cabbage, and chopped tomato. Add the red chili powder and salt. Stir in the coconut oil and crushed groundnuts (if using).
Add Puffed Rice & Serve
