Ingredients
For the Chickpeas
- 1 cup Chickpeas dried chickpeas; soak overnight and boil until tender (about 15-20 minutes), garbanzo beans
For the Vegetables
- 1 Onion medium-sized, finely chopped
- 1/2 Bell Peppers finely chopped, yellow
- 1/2 Bell Peppers finely chopped, red
- 1/2 Bell Peppers also known as capsicum; finely chopped, green
- 1 Tomato medium-sized, finely chopped
Instructions
Prepare the Chickpeas
- Soak 1 cup of dried chickpeas overnight in cold water. Drain and rinse. Boil in fresh water with a pinch of salt for 15-20 minutes, or until tender. Drain well and set aside.
Prepare the Vegetables
- Finely chop 1 medium onion, 1/2 yellow bell pepper, 1/2 red bell pepper, and 1/2 green bell pepper. Finely chop 1 medium tomato.
Make the Dressing
- In a small bowl, whisk together 1.5 tablespoons extra virgin olive oil, 1 tablespoon dried oregano (or 2 tablespoons fresh), 1/2 teaspoon salt, 1/2 tablespoon black pepper, and the juice of 1 lemon.
Combine and Serve
- In a large bowl, combine the cooked chickpeas, chopped vegetables, and the prepared dressing. Add 4-5 roughly chopped dried figs. Stir in 1/2 cup of finely chopped fresh cilantro. Gently toss to combine. Refrigerate for at least 15 minutes to allow the flavors to meld. Serve chilled.
