  • Rub the ghee into the flour mixture with your fingertips until it resembles coarse crumbs.
  • Gradually add water and knead until a soft, pliable dough forms. This will take about 5-7 minutes.
  • Cover the dough and let it rest for 30 minutes. This allows the gluten to relax, resulting in a more tender dough.
  • While the dough rests, prepare the filling. Boil the potatoes until tender, then peel and mash them thoroughly.
  • Heat 2 tablespoons of oil in a pan over medium heat.
  • Add the cumin seeds and let them sizzle for a few seconds to release their aroma.
  • Add the ginger-garlic paste, green chilies, ground coriander, red chili powder, and turmeric powder. Sauté for about a minute until fragrant.
  • Add the mashed potatoes, salt, and roasted cumin powder to the pan. Mix well and cook for 1-2 minutes.
  • Stir in the chopped cilantro. Remove the filling from the heat and let it cool completely.
  • On a lightly floured surface, roll out the dough into a thin, large circle, similar to a chapati.
  • Spread the cooled potato filling evenly over the dough.
  • Tightly roll the dough into a log, then seal the edges. Place the log in the refrigerator for at least 1 hour to firm up. This will make it easier to slice and maintain the pinwheel shape.
  • Cut the chilled log into 1/2-inch thick slices.
  • Heat enough oil in a deep pan or kadai for frying. The oil should be hot but not smoking.
  • Gently place the samosa slices into the hot oil. Reduce the heat to medium-low and fry until golden brown and crispy, turning occasionally. Frying on lower heat ensures the samosas cook through evenly.
  • Remove the samosas from the oil and drain them on paper towels. Serve hot with your favorite chutney or tea.

Recipe Notes

Good To Know

  • For extra crunch and layered texture, chill the rolled dough logs in the refrigerator for 15-20 minutes before slicing them into pinwheels. This helps maintain their shape and gives a flakier result.
  • For a healthier version, bake the pinwheels instead of frying. Arrange them on a baking tray, brush lightly with oil, and bake at 200°C (390°F) until golden, flipping once halfway through.
  • Customize your filling by adding finely chopped nuts (like cashews or peanuts) or dried fruits (like raisins).
  • To keep the pinwheels crisp after frying, place them on a wire rack instead of paper towels.

Expert Tips

  • For even cooking, ensure the pinwheels are of similar thickness when slicing the dough log.
  • Don't overcrowd the pan when frying; work in batches to ensure even browning and crispiness.
  • Serve these pinwheels with a variety of dipping sauces, such as spicy chutney, tangy yogurt dip, or sweet chili sauce.

Storage Instructions

  • Store leftover pinwheels in an airtight container at room temperature for up to 2 days. Reheat in a preheated oven or air fryer for a few minutes to restore crispness.
