Instructions

Prepare the Potatoes

  • Preheat oven to 350°F (175°C). Peel and thinly slice the potatoes. Aim for even slices about 1/8 inch thick.

Combine Ingredients

  • In a large bowl, combine the melted butter, grated Parmesan cheese, garlic powder, dried thyme, salt, and black pepper.
  • Add the sliced potatoes and toss gently to coat them evenly in the mixture.

Assemble and Bake

  • Lightly grease 6 muffin cups. Layer the potato slices into each muffin cup, creating stacks.
  • Sprinkle a little extra freshly ground black pepper over the tops of the stacks.
  • Bake for 55-60 minutes, or until the potato stacks are golden brown and tender.

Rest and Garnish

  • Remove the potato stacks from the oven and let them rest in the muffin tins for 5 minutes before carefully removing them.
  • Garnish with extra grated Parmesan cheese and fresh thyme sprigs, if desired.

Recipe Notes

Expert Tips for Perfect Parmesan Potato Stacks

  • For extra crispy stacks, use a mandoline slicer to ensure perfectly even potato slices.
  • If your potatoes release excess moisture during baking, you can carefully drain it off about halfway through the cooking time to help them crisp up.
  • Feel free to experiment with other herbs and spices. Rosemary, oregano, or a pinch of red pepper flakes would all be delicious additions.
  • These potato stacks can be made ahead of time and reheated. Store them in an airtight container in the refrigerator for up to 2 days and reheat in a 350°F (175°C) oven for 10-15 minutes.
