Ingredients
For the Dough
- 100 gm Cottage Cheese indian cottage cheese; ensure it's fresh and firm
- 3 tbsp Butter unsalted
- 1 cup Milk
- 1 cup All-Purpose Flour maida
- 1/2 tsp Salt or to taste
- 1/4 tsp Baking Soda
For Frying
- 2 cup Ghee clarified butter; you can substitute with vegetable oil
Instructions
Prepare the Paneer
- Grate the paneer using a grater.
Make the Dough
- In a large bowl, combine the grated paneer, butter, milk, all-purpose flour, salt, and baking soda.
- Mix well until a soft, pliable dough forms. Knead gently for 2-3 minutes.
- Let the dough rest for 15 minutes, covered with a clean kitchen towel.
Roll and Cut
- On a lightly floured surface, roll out the dough as thinly as possible. Aim for a thickness of about 1/8 inch.
- Use a sharp knife or pizza cutter to cut the rolled dough into small, square-shaped cheeslings.
Fry the Cheeslings
- Heat the ghee in a wide, heavy-bottomed pan or wok over medium-low heat.
- Carefully add the cheeslings to the hot ghee, ensuring not to overcrowd the pan.
- Fry the cheeslings in batches, turning occasionally, until they are golden brown and crispy. This should take about 3-5 minutes per batch.
Finish and Serve
- Remove the fried cheeslings from the ghee using a slotted spoon and place them on a plate lined with paper towels to absorb excess oil.
- Serve the crispy cheeslings warm and enjoy!
Recipe Notes
Expert Tips for Perfect Cheeslings
- For extra flavor, add a pinch of your favorite spices to the dough, such as chili powder, garam masala, or chaat masala.
- Don't overcrowd the pan while frying; this will lower the temperature of the ghee and result in oily, rather than crispy, cheeslings.
- Fry the cheeslings over medium-low heat to ensure they cook through evenly and achieve a beautiful golden-brown color without burning.
- If you prefer a less rich snack, you can reduce the amount of ghee used or substitute with vegetable oil.
