Ingredients
For the Potato Filling:
- 3 Potato boiled, mashed, medium, peeled
- 1 medium Onion finely chopped
- 2 Chili finely chopped, green
- 1/2 tsp Chaat Masala
- 2 tbsp Tomato Ketchup
- 1/2 tsp Cumin seeds
- 1 pinch Asafoetida hing
- Salt to taste
For the Paneer Kababs:
- 250 grams Cottage Cheese cut into 3-inch squares, indian cottage cheese
- 1 tbsp Oil for sauteing the filling, plus 3 tablespoons for frying
For Coating:
- 1/2 cup Breadcrumb dry
- 4 tbsp Corn Flour
- Water to make a thin batter
For Serving:
- 2-3 tbsp Tomato Ketchup for serving, or chutney
Instructions
Prepare the Potato Filling
- Heat 1 tablespoon of oil in a pan. Add cumin seeds and asafoetida; sauté until fragrant. Add chopped onions and green chilies; sauté until softened. Stir in mashed potatoes, salt, chaat masala, and tomato ketchup. Cook for 1 minute, then remove from heat and let cool.
Assemble the Paneer Sandwiches
- Take a paneer square. Spread a layer of the potato mixture evenly over one half. Top with another paneer square to create a sandwich.
Prepare the Coating
- In a bowl, whisk together cornflour and enough water to form a smooth, thin batter. Place breadcrumbs in a separate shallow dish.
Fry the Kababs
- Dip each paneer sandwich in the cornflour batter, then coat thoroughly with breadcrumbs. Heat remaining oil (3 tablespoons) in a pan over medium heat. Carefully place the kababs in the hot oil and fry until golden brown and crispy on all sides.
Serve
- Remove the kababs from the pan and place them on a paper towel-lined plate to drain excess oil. Cut each kabab into triangles and serve hot with tomato ketchup or your favorite chutney.
