  • 1 tbsp Oil for sauteing the filling, plus 3 tablespoons for frying

Prepare the Potato Filling

  • Heat 1 tablespoon of oil in a pan. Add cumin seeds and asafoetida; sauté until fragrant. Add chopped onions and green chilies; sauté until softened. Stir in mashed potatoes, salt, chaat masala, and tomato ketchup. Cook for 1 minute, then remove from heat and let cool.

Assemble the Paneer Sandwiches

  • Take a paneer square. Spread a layer of the potato mixture evenly over one half. Top with another paneer square to create a sandwich.

Prepare the Coating

  • In a bowl, whisk together cornflour and enough water to form a smooth, thin batter. Place breadcrumbs in a separate shallow dish.

Fry the Kababs

  • Dip each paneer sandwich in the cornflour batter, then coat thoroughly with breadcrumbs. Heat remaining oil (3 tablespoons) in a pan over medium heat. Carefully place the kababs in the hot oil and fry until golden brown and crispy on all sides.

Serve
