Ingredients
- 2 cup All-Purpose Flour
- 1/2 cup Semolina suji
- 1/4 cup Gram Flour began
- 50 gm Butter
- Cumin black pepper, jeera, roasted, salt to taste
- Coriander chutney fresh, dhania

- Combine all-purpose flour, semolina, gram flour, salt, and butter in a large bowl. Gradually add water, mixing until a smooth, pliable dough forms. Let the dough rest for at least 30 minutes.
Roll and Cook the Papdis
- Divide the dough into small portions. Roll each portion into a thin, square shape. Using a grill pan or a lightly oiled baking sheet, bake each papdi over medium heat for 2-3 minutes per side, or until lightly golden and crispy. Alternatively, you can bake them in a preheated oven at 350°F (175°C) for 10-12 minutes, flipping halfway through.
Prepare the Chaat Filling
- In a bowl, combine the boiled chickpeas, cumin seeds, black pepper, red chili powder, garam masala (if using), lemon juice, salt, and tamarind chutney. Mix well.
