Instructions

Prepare the Papdi Dough

  • Combine all-purpose flour, semolina, gram flour, salt, and butter in a large bowl. Gradually add water, mixing until a smooth, pliable dough forms. Let the dough rest for at least 30 minutes.

Roll and Cook the Papdis

  • Divide the dough into small portions. Roll each portion into a thin, square shape. Using a grill pan or a lightly oiled baking sheet, bake each papdi over medium heat for 2-3 minutes per side, or until lightly golden and crispy. Alternatively, you can bake them in a preheated oven at 350°F (175°C) for 10-12 minutes, flipping halfway through.

Prepare the Chaat Filling

  • In a bowl, combine the boiled chickpeas, cumin seeds, black pepper, red chili powder, garam masala (if using), lemon juice, salt, and tamarind chutney. Mix well.

Assemble and Serve

  • Place the crispy papdis on a serving plate. Top with the chickpea mixture and garnish with fresh cilantro. Serve immediately and enjoy!
