Ingredients
For the Cauliflower Blanch
- 1 head Cauliflower cut into florets
- 1/2 tsp Salt
- 1/4 tsp Turmeric powder
For the Pakora Batter
- 3 tbsp Gram Flour besan
- 3 tbsp Corn Flour
- 3 tbsp Wheat Flour whole
- 1/2 tsp Garam Masala
- 2 tsp Ginger-Garlic Paste
- 3 tbsp Yogurt curd
- 2 tsp Chili Powder kashmiri, red
- 2 tbsp Coriander finely chopped, fresh leaves
- 1 1/2 tsp Salt or to taste
For Frying
- Oil for deep frying
Instructions
- In a large pot, bring a generous amount of water to a boil. Add salt and turmeric powder. Blanching the cauliflower in this way helps to remove any raw flavors and sets the vibrant color.
- Once boiling, add the cauliflower florets and blanch for 5 minutes. This will soften them slightly while maintaining their texture.
- Drain the cauliflower in a colander and transfer to a large bowl.
- In the bowl with the cauliflower, combine the gram flour, corn flour, whole wheat flour, garam masala, ginger-garlic paste, yogurt, Kashmiri red chili powder, chopped coriander leaves, and salt.
- Mix well, ensuring the cauliflower florets are evenly coated in the batter. Allow the mixture to marinate for 20 minutes. This allows the flavors to meld and the cauliflower to absorb the spices.
