Ingredients
Cauliflower Prep
- 1 medium Cauliflower
Dry Spices & Seasoning
- 1 1/2 - 2 tsp Salt adjust to taste
- 1 tbsp Rice Flour
- 1 tsp Chili Powder
- 1/4 tsp Turmeric for color and flavor
- 1 pinch Food Coloring for a brighter color, optional, red
Wet Ingredients
- 2-3 tbsp Water add more as needed for desired consistency
- 1 tbsp Lemon Juice
Frying
- 1 cup Oil for deep frying, vegetable or canola oil
Instructions
Prepare the Cauliflower
- Cut the cauliflower into bite-sized florets. Blanch the florets in boiling water for 5 minutes. Drain well and set aside.
Make the Masala Coating
- In a large bowl, combine the rice flour, chili powder, turmeric powder, salt, and red food coloring (if using). Mix well.
Marinate the Cauliflower
- Add the blanched cauliflower to the spice mixture. Drizzle with lemon juice and add water, a tablespoon at a time, until the cauliflower is evenly coated. Marinate for at least 30 minutes, or longer for deeper flavor.
Fry the Cauliflower
- Heat the oil in a deep pan or kadai over medium-high heat. Once hot, carefully add the marinated cauliflower florets. Fry in batches, ensuring not to overcrowd the pan, until golden brown and crispy. Remove with a slotted spoon and drain on paper towels to remove excess oil.
