Instructions

Prepare the Cauliflower

  • Cut the cauliflower into bite-sized florets. Blanch the florets in boiling water for 5 minutes. Drain well and set aside.

Make the Masala Coating

  • In a large bowl, combine the rice flour, chili powder, turmeric powder, salt, and red food coloring (if using). Mix well.

Marinate the Cauliflower

  • Add the blanched cauliflower to the spice mixture. Drizzle with lemon juice and add water, a tablespoon at a time, until the cauliflower is evenly coated. Marinate for at least 30 minutes, or longer for deeper flavor.

Fry the Cauliflower

  • Heat the oil in a deep pan or kadai over medium-high heat. Once hot, carefully add the marinated cauliflower florets. Fry in batches, ensuring not to overcrowd the pan, until golden brown and crispy. Remove with a slotted spoon and drain on paper towels to remove excess oil.

Serve and Enjoy

  • Serve hot as a snack with tea or as a side dish with your favorite meals.

Recipe Notes

Expert Tips for the Best Crispy Masala Cauliflower

  • For extra crispy cauliflower, you can double-fry the florets. Fry once until partially cooked, then let cool slightly before frying again until golden brown and extra crispy.
  • Adjust the amount of chili powder according to your spice preference. If you like it extra spicy, feel free to add more.
  • Don't overcrowd the pan when frying the cauliflower. This will ensure even cooking and prevent steaming.
  • For a more flavorful masala, consider adding a pinch of garam masala or other spices like cumin powder or coriander powder to the coating.
