Ingredients
For the Kachoris
- 1 cup All-Purpose Flour maida
- 1/2 tsp Salt
- 1 tbsp Oil plus extra for frying
- Water as needed Water to make dough
For the Chaat
- 1/2 cup Tamarind Pulp soaked in warm water, then strained
- 1/2 cup Yogurt plain
- 1/2 tsp Salt black
- 1/2 tsp Chili Powder red
- 1 tbsp Chaat Masala
- 1 Onion finely chopped
- 1/4 cup Coriander dhania, finely chopped
- 1 Chili finely chopped, green
- 1 Potato boiled and mashed
- 1/4 cup Chickpea Noodle bhujia or namkeen sev
- 1 tsp Sugar for tamarind chutney
Instructions
Make the Kachori Dough
- Combine all-purpose flour, salt, and 1 tbsp oil in a bowl. Gradually add water, mixing until a stiff dough forms. Knead for 5-7 minutes until smooth. Cover and let rest for 30 minutes.
Prepare the Kachoris
- Roll out small circles of dough. Fry in hot oil over medium-low heat until golden brown and puffed up. Drain on paper towels.
Assemble the Chaat
- Place 2 fried kachoris on a plate. Top each with a thin layer of mashed potato.
Add Toppings
- Spread chopped onion, coriander, and green chili over the potatoes.
Drizzle and Sprinkle
- Drizzle with tamarind chutney (mix tamarind pulp with sugar to taste), yogurt, and a sprinkle of red chili powder, chaat masala, black salt, and salt to taste.
Finish and Serve
- Garnish with sev and serve immediately.
