Ingredients
- 1 cup Semolina suji, or base ingredients for the base the rajkachori
- Refined Oil for frying
- 1/2 cup Soda drinking
- 1.5 tsp Salt or as per taste
- 1 cup Stuffing or curd ingredients for the curd
- Chili Powder or chaat, or masala chaat masala and as per taste, red
- 1 cup Kala Chana boiled, boiled black channa
- 2 tsp Tamarind Chutney or sauce sauce
- 1/2 cup Pomegranate Seeds
- 1/2 cup Tomatoes chopped
- 1.5 tsp Salt or as per taste
Instructions
Prepare the Kachori Dough
- Combine semolina, baking soda, salt, and water. Knead into a smooth dough. Let it rest for 15-20 minutes.
Make the Kachori Shells
- Roll small portions of the dough into thin circles. Deep fry in hot oil until puffed and golden brown. Drain on paper towels.
Prepare the Filling
- In a bowl, combine the boiled chickpeas, tamarind chutney, mint-cilantro chutney, red chili powder, chaat masala (if using), salt, yogurt, pomegranate seeds, tomatoes, and onions.
Assemble the Raj Kachori
- Carefully make a small opening at the top of each fried kachori and fill generously with the prepared filling. Garnish with sev (if using).
