Ingredients
For the Chicken Marinade
- 250 gm Chicken Thighs boneless, cut into bite-sized pieces, skinless
- 4 Tbsp Cashew Paste
- 1 Tbsp Chili Paste freshly ground, green
- 1/2 tsp Ginger coarsely crushed
- 2 Tbsp Garlic coarsely crushed
- 1 Tbsp Vinegar
- 1/2 Tbsp Soy Sauce
- 3 Tbsp Chili Sauce adjust to your spice preference, red
- Salt to taste
For the Crispy Coating
- 1 Egg large, whisked
- 1 cup Gram Flour besan
- 2 Tbsp Corn Flour
- 2 Tbsp All-Purpose Flour maida
Instructions
- In a large bowl, combine the chicken pieces with all the marinade ingredients: cashew paste, green chili paste, ginger, garlic, vinegar, soy sauce, red chili sauce, and salt.
- Mix thoroughly, ensuring the chicken is evenly coated. Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld. Marinating helps tenderize the chicken and infuse it with flavor.
- In a separate bowl, whisk the egg. In another bowl, combine the gram flour, corn flour, and all-purpose flour.
- Heat the oil in a large skillet over medium heat. The oil is ready when a small piece of batter sizzles gently.
- Dip each marinated chicken piece in the whisked egg, then dredge in the flour mixture, ensuring it's fully coated. Gently shake off any excess flour.
