For the Marinade
- 3 tbsp Yogurt curd
For the Batter
- 3 tbsp Gram Flour besan
- 1/2 cup Rice Flour or cornmeal for a slightly different texture
- 1.5 tsp Salt
- 1/2 tsp Pepper black, to taste
- 1/2 tsp Chili Powder adjust to your spice preference, red
For Frying
- 1/2 cup Mustard Oil or vegetable oil for a neutral flavor
Instructions
Prepare the Okra
- Wash, dry, and cut the okra into 1/4-inch thick slices.
- In a bowl, gently toss the okra with the yogurt. Let it marinate for at least 10 minutes.
Make the Batter
- In a separate bowl, whisk together the gram flour, rice flour, salt, black pepper, and red chili powder until well combined.
Coat and Fry
- Carefully dredge the marinated okra pieces in the dry flour mixture, ensuring each piece is evenly coated. Shake off any excess flour.
- Heat the mustard oil in a shallow pan over medium-high heat.
- Once the oil is hot (a small piece of okra should sizzle immediately), carefully add the coated okra to the pan, making sure not to overcrowd it.
- Fry, stirring occasionally, until the okra is golden brown and crispy, about 5-7 minutes. Reduce heat if necessary to prevent burning.
Serve
- Remove the crispy okra from the pan and place it on a paper towel-lined plate to drain excess oil.
- Serve immediately and enjoy!
Recipe Notes
Expert Tips for Extra-Crispy Okra
- Don't overcrowd the pan: Working in batches ensures even cooking and prevents steaming.
- Control the heat: Medium-high heat initially for crisping, then reduce to medium to prevent burning.
- Pat dry thoroughly: Excess moisture prevents optimal crispness. Make sure the okra is completely dry before coating.
- Experiment with spices: Add other spices like turmeric, cumin, or coriander for a unique flavor profile.
