Prepare the Semolina Batter

  • Add the vinegar to the milk and set aside. In a large bowl, whisk together the semolina, sugar, and vegetable oil.
  • Gradually add the milk-vinegar mixture to the dry ingredients, whisking until well combined.
  • Let the batter rest for 15 minutes to allow the semolina to ferment and soften. This improves the cake's texture.
  • If the batter is too thick, add a little more milk to achieve the consistency of a thick pancake batter.

Add Leavening Agents and Color

  • Once the semolina has fermented, gently fold in the baking powder and baking soda.
  • Divide the batter into three equal portions.
  • Leave one portion plain. Add cocoa powder to one portion for a chocolate swirl. Add red and green food coloring to the remaining portions to achieve a tricolor effect.

Bake the Cake

  • Preheat your oven to 350°F (180°C). Grease and flour a 9x13 inch baking pan.
