Ingredients
For the Potatoes
- 2 large Potato cut into 1-inch thick wedges, russet or yukon gold recommended
- 1.5 cup Vegetable Oil for deep frying
For the Honey Chili Sauce
- 1 medium Onion finely diced
- 4 thinly sliced Chili Pepper adjust to your spice preference, green
- 2 tbsp Ketchup
- 5 cloves Garlic minced
- 1 inch Ginger minced
- 1 tsp Chili Sauce red, sriracha or your favorite brand
- 1 tsp Vinegar adds brightness, optional, white
- 3 tbsp Honey
- 1.5 tsp Salt or to taste
- 1 tbsp Sesame Seeds for garnish
- 1/4 cup Corn Flour mixed with 2 tablespoons of cold water to form a slurry
- 2 tbsp Vegetable Oil for sautéing
Instructions
Prepare the Potatoes
- Cut potatoes into wedges, ensuring even thickness for consistent cooking. Pat them completely dry with paper towels. This is crucial for achieving extra crispy potatoes. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Carefully add potato wedges in batches, avoiding overcrowding. Fry until golden brown and crispy, about 6-8 minutes. Remove with a slotted spoon and drain on paper towels.
Make the Honey Chili Sauce
- Heat 2 tablespoons of vegetable oil in a wok or large skillet over medium heat. Add minced garlic and ginger, sauté for about 1 minute until fragrant.
- Add diced onions and sauté until softened and translucent, about 3-4 minutes.
- Stir in green chilies, salt, red chili sauce, and vinegar. Cook for 1 minute, allowing flavors to meld.
- Whisk together cornstarch slurry (cornstarch mixed with 2 tbsp cold water) and stir into the sauce. Cook for 1-2 minutes until sauce thickens.
- Stir in honey and cook for another minute, until the sauce becomes glossy.
Combine and Serve
- Add the crispy fried potatoes to the honey chili sauce. Toss gently to coat evenly. Sprinkle with sesame seeds.
- Serve immediately as a hot appetizer or snack.
Recipe Notes
Expert Tips for the Perfect Honey Chili Potatoes
- Double Fry for Extra Crispiness: For extra crispy potatoes, consider a double-fry method. Fry the potatoes once until partially cooked, then remove, let cool slightly, and fry again until golden brown and extremely crispy.
- Adjust the Spice Level: Customize the spice level by adjusting the amount of green chilies and red chili sauce. For milder flavor, use fewer chilies or a milder chili sauce.
- Don't Overcrowd the Pan: Fry potatoes in batches to ensure even cooking and prevent them from steaming instead of crisping.
- Fresh Ingredients Matter: Using fresh ginger and garlic will significantly enhance the flavor of your sauce.
