Ingredients
For the Filling
- 1 cup Potatoes mashed
- 1 cup Vegetables (such as peas, beans, carrots), chopped, green
- 1 tsp Garam Masala
- 1 tsp Chili Powder red
- 1 1/2 tsp Salt or to taste
For the Fritters
- 1 cup Flattened Rice poha, soaked for 5 minutes, then drained
- 1 cup Rice Flour
- Oil for frying
Instructions
- Soak the flattened rice (poha) in water for 5 minutes. Drain well. This softens the rice for easier mixing.
- In a pan, sauté the chopped green vegetables with salt, red chili powder, and garam masala until tender.
- In a mixing bowl, combine the mashed potatoes, drained flattened rice, and the cooked green vegetables.
- Shape the mixture into small patties or fritters. Gently flatten each fritter.
- Heat oil in a frying pan over medium heat. Fry the fritters until golden brown and crispy, turning occasionally for even cooking.
- Remove the fritters from the pan and place them on a paper towel-lined plate to absorb excess oil.
- Serve hot with your favorite chutney or sauce.
Recipe Notes
Good To Know
- For an extra-crispy exterior, lightly toast the flat rice (poha) in a dry pan before mixing it with the other ingredients. This helps the chops hold their shape and adds a subtle nutty flavor.
- If you want a protein boost, add a handful of crumbled paneer or cooked chickpeas to the vegetable-potato filling.
- Serve the chops with a tangy Bengali kasundi (mustard sauce) or a fresh mint-coriander chutney.
- To make these ahead, shape and coat the chops, then freeze them on a tray. Once frozen, transfer to a zip-top bag and fry directly from frozen when ready to serve—just add an extra minute to the frying time.
Expert Tips
- Adjust the spice level to your preference by adding more or less green chilies to the filling.
- For a richer flavor, try shallow-frying the chops in ghee or a combination of oil and ghee.
- Don't overcrowd the pan when frying; this will lower the oil temperature and result in soggy chops. Fry in batches for best results.
Storage Instructions
- Store leftover chops in an airtight container in the refrigerator for up to 3 days. Reheat in a toaster oven or air fryer for best results.
