Ingredients
Potato Mixture
- 1 cup Potato boiled and mashed
- 1 Onion finely chopped, medium
- 1 tsp Garlic Paste
- 1 tsp Mustard Seeds
- 1 tsp Cumin Seeds
- 1 Tbsp Chili finely chopped, green
- 1 ½ tsp Salt or to taste
Batter
- 2 cup Urad Dal Batter (vada batter), fresh
- 2 Curry Leaves fresh

- Oil for frying
Instructions
- Heat 2 tablespoons of oil in a pan over medium heat. Add the mustard seeds and allow them to sputter. This releases their aromatic flavor.
- Add the chopped onion and green chili to the pan. Sauté for about a minute, until the onion softens slightly.
- Add the garlic paste and continue to sauté for another minute, stirring frequently, until fragrant. Be careful not to burn the garlic.
- Add the mashed boiled potato, cumin seeds, and salt to the pan. Mix well to combine all the ingredients. Cook for a minute, stirring continuously, to heat the potatoes through.
- Remove the potato mixture from the heat and let it cool completely. Once cooled, form the mixture into small, lemon-sized balls.
- In a bowl, combine the fresh Urad dal batter, chopped curry leaves, and salt. Mix well until everything is evenly distributed.
- Heat oil in a deep pan or kadai over medium heat. The oil is ready when a small drop of batter sizzles and floats to the top.
- Dip each potato ball into the Urad dal batter, ensuring it's fully coated. Gently drop the battered potato balls into the hot oil.
