Instructions

  • Heat 2 tablespoons of oil in a pan over medium heat. Add the mustard seeds and allow them to sputter. This releases their aromatic flavor.
  • Add the chopped onion and green chili to the pan. Sauté for about a minute, until the onion softens slightly.
  • Add the garlic paste and continue to sauté for another minute, stirring frequently, until fragrant. Be careful not to burn the garlic.
  • Add the mashed boiled potato, cumin seeds, and salt to the pan. Mix well to combine all the ingredients. Cook for a minute, stirring continuously, to heat the potatoes through.
  • Remove the potato mixture from the heat and let it cool completely. Once cooled, form the mixture into small, lemon-sized balls.
  • In a bowl, combine the fresh Urad dal batter, chopped curry leaves, and salt. Mix well until everything is evenly distributed.
  • Heat oil in a deep pan or kadai over medium heat. The oil is ready when a small drop of batter sizzles and floats to the top.
  • Dip each potato ball into the Urad dal batter, ensuring it's fully coated. Gently drop the battered potato balls into the hot oil.
  • Fry the Biri Chop for 2 to 3 minutes, turning occasionally, until they are golden brown and crispy.
  • Remove the fried Biri Chop from the oil and place them on a plate lined with paper towels to drain excess oil.
  • Serve the hot, crispy Biri Chop with your favorite chutney or sauce.

Recipe Notes

Good To Know

  • For extra crispiness, double-fry the fritters: fry them once until lightly golden, let them cool for a few minutes, then fry again until deep golden and crisp.
  • If you prefer a milder flavor, sauté the green chilies and garlic paste before adding them to the potato mixture—this mellows their sharpness and adds a subtle depth to the filling.
  • To keep the fritters warm and crisp for a party, place them on a wire rack in a low oven (around 120°C/250°F) rather than stacking them, which can cause sogginess.
  • Serve with a tangy tamarind chutney or a spicy mint-coriander dip to complement the earthy flavors of the urad dal batter and potato filling.

Expert Tips

  • For a richer flavor, soak the urad dal for at least 4 hours, or even overnight. This will result in a lighter, fluffier batter.
  • Don't overcrowd the pan when frying. Fry in batches to ensure even cooking and optimal crispiness.
  • Adjust the spice level by adding more or fewer green chilies to the potato mixture according to your preference.

Storage Instructions

  • These fritters are best enjoyed fresh. However, leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat in a toaster oven or air fryer for best results.
