Ingredients
 

For the Falafel

  • 1 cup Chickpea dried, or overnight for best results., soak for at least 2 hours
  • 1 Onion small
  • 3 clove Garlic
  • 1 Chili Pepper adjust to your spice preference., green
  • 1/2 bunch Parsley fresh parsley is recommended.
  • 1 tbsp Gram Flour also known as besan
  • 1/2 tsp Coriander also known as dhania
  • 1 tsp Cumin ground cumin is preferred
  • 1/2 tsp Cayenne Pepper adjust to your spice preference. optional.
  • 1/2 tsp Salt to taste.
  • 1/4 tsp Pepper black, freshly ground is best.

Prepare the Chickpeas

  • Soak 1 cup of dried chickpeas in plenty of water for at least 2 hours, or preferably overnight.

Prepare the Vegetables and Herbs

  • Finely chop 1 small onion, 3 cloves of garlic, 1 green chili, and 1/2 bunch of fresh parsley.

Blend the Falafel Mixture

  • Drain the soaked chickpeas. In a food processor or blender, combine the chickpeas, chopped onion, garlic, green chili, parsley, 1 tbsp gram flour, 1/2 tsp coriander powder, 1 tsp cumin, 1/2 tsp cayenne pepper (optional), salt, and pepper. Blend until you achieve a coarse paste. Do not over-process.

Refrigerate the Mixture

  • Transfer the falafel mixture to a bowl, cover, and refrigerate for at least 1 hour. This allows the flavors to meld and helps the falafel hold its shape during frying.

Fry the Falafel

  • Heat 2 cups of vegetable oil in a deep pan or kadai over medium heat. Test the oil temperature by dropping a small amount of the falafel mixture into the hot oil; it should sizzle immediately and cook through without burning.

Form and Fry

  • Once the oil is hot, carefully drop spoonfuls of the falafel mixture into the hot oil, ensuring not to overcrowd the pan. Fry in batches until golden brown and crispy on all sides, turning occasionally. This should take approximately 3-4 minutes per batch.

Drain and Serve

  • Remove the cooked falafel from the oil and place them on a wire rack or paper towel to drain excess oil. Serve hot with your favorite dips, such as tahini, hummus, or yogurt. Enjoy!
