  • Pressure cook the cubed potatoes for 3-4 whistles with 2 cups of water. Once pressure releases naturally, drain the water, let cool, peel, and mash the potatoes.
  • Boil green peas separately until tender, drain, and set aside.
  • Heat oil in a pan. Add cumin seeds and let them splutter. Add sesame seeds, ginger, garlic, and green chilies. Sauté until fragrant.
  • Add mashed potatoes, green peas, turmeric powder, salt, and coriander. Mix well and let cool completely.

Make the Batter

  • In a bowl, whisk together flour, chili powder, turmeric powder, carom seeds, asafoetida, and salt. Gradually add water, mixing until a smooth batter forms, similar in consistency to dosa batter.

Assemble and Fry the Pakoras

  • Spread a layer of the potato mixture evenly on each slice of bread.
  • Dip each bread slice into the batter, ensuring both sides are coated.
  • Heat oil in a deep pan for deep frying. Carefully drop the bread pakoras into the hot oil.
  • Fry, flipping occasionally, until golden brown and crispy.
  • Remove with a slotted spoon and drain on paper towels.
  • Cut each pakora into 2-4 triangular pieces.
