Instructions

Prepare the Potato Filling

  • Cut the boiled potatoes into small pieces. Heat oil in a pan, add chopped onions and saute until translucent. Add ginger-garlic paste, green peas and stir-fry for 2 minutes. Now add mashed potatoes, black pepper, garam masala, salt and tomato paste. Mix well and cook until the mixture is slightly dry. Set aside to cool.

Make the Batter

  • In a bowl, whisk together gram flour, rice flour, carom seeds, salt, and 1 tablespoon of oil. Add water gradually while whisking to create a smooth, slightly thick batter. The consistency should be similar to pancake batter.

Assemble and Fry the Pakodas

  • Cut the bread slices diagonally. Spread a spoonful of the potato filling onto each bread slice. Dip the filled bread slices into the batter, ensuring they are fully coated. Heat oil in a deep frying pan or kadai. Carefully place the coated bread slices into the hot oil. Fry until they turn golden brown and crispy, flipping them halfway through. Remove the pakodas from the oil and drain on a paper towel.

Serve

  • Serve the hot and crispy bread pakodas with tomato ketchup or your favorite chutney.

Recipe Notes

Expert Tips for Perfect Bread Pakodas

  • For extra crispy pakodas, ensure the batter isn't too thin. A thicker batter helps create a crispier coating.
  • Don't overcrowd the pan when frying. Frying in batches ensures even cooking and prevents the oil temperature from dropping too much.
  • Adjust the spices according to your preference. Feel free to add other spices like chili powder for extra heat.
  • Serve immediately for the best taste and texture. The pakodas are best enjoyed fresh and crispy.
