Ingredients
For the Potato Fritters
- 2 medium Potato russet or starchy potatoes recommended; thinly sliced
- 1 cup Gram Flour also known as besan
- 1/2 cup Water add more as needed to achieve desired batter consistency
- 1.5 tsp Salt adjust to taste
- 1/2 tsp Turmeric haldi
- 1/3 tsp Chili Powder adjust to your spice preference, red
- 1/4 tsp Baking Soda
- 2 cup Oil canola, for deep frying; vegetable, or peanut oil recommended
For Serving (Optional)
- Chutney mint chutney, or your favorite dipping sauce, tamarind chutney
Instructions
Prepare the Potatoes
- Wash and peel the potatoes. Using a mandoline slicer or sharp knife, slice the potatoes thinly and evenly. Set aside.
Make the Batter
- In a large bowl, whisk together the gram flour, turmeric powder, red chili powder, baking soda, and salt. Gradually add water, whisking constantly until a smooth, slightly thick batter forms. Let the batter rest for 10-15 minutes to allow the flavors to meld.
Fry the Batata Bhajiya
- Heat the oil in a deep, heavy-bottomed pan or wok over medium-high heat. Once the oil is hot (a small piece of batter should sizzle immediately), carefully dip each potato slice into the batter, ensuring it's fully coated. Gently slide the coated potato slices into the hot oil, avoiding overcrowding the pan.
Cook the Fritters
- Fry the batata bhajiya for about 2 minutes per side, or until they are golden brown and crispy. Flip them gently using a slotted spoon. Remove the cooked fritters from the oil and place them on a plate lined with paper towels to drain excess oil.
Serve and Enjoy
- Serve the hot, crispy batata bhajiya immediately with your favorite chutney or dipping sauce.
Recipe Notes
Expert Tips for Perfect Batata Bhajiya
- For extra crispy fritters, ensure your potatoes are completely dry before coating them in the batter. Pat them gently with a paper towel.
- Don't overcrowd the pan when frying. This will lower the oil temperature and result in soggy fritters. Fry in batches for optimal results.
- Adjust the amount of chili powder to suit your spice preference. You can add a pinch of garam masala for extra warmth.
- For a healthier version, consider shallow frying the batata bhajiya instead of deep frying. This will reduce the amount of oil absorbed.
