Prepare the Potato Filling

  • Boil the potatoes until tender, then mash them thoroughly. In a bowl, combine the mashed potatoes with the finely chopped onion, green chilies, coriander leaves, turmeric powder, salt, chaat masala, coriander powder, red chili powder, and ginger paste. Mix well to ensure all ingredients are evenly distributed.

Shape the Vada

  • Form small, smooth balls from the potato mixture. Set aside.

Make the Batter

  • In a separate bowl, whisk together the chickpea flour, salt, and optional red chili powder. Gradually add water, whisking continuously, until you achieve a thick, smooth batter without any lumps. The batter should be thick enough to coat the potato balls but not so thick that it's difficult to dip them.

Fry the Batata Vada

  • Heat the vegetable oil in a deep pan or kadai over medium-high heat. Dip each potato ball into the batter, ensuring it's fully coated. Carefully drop the coated balls into the hot oil, making sure not to overcrowd the pan.
