  • 1/4 cup Thandai Masala homemade or store-bought. adjust according to your taste.

Prepare the Thandai Mixture

  • Combine the milk and heavy cream in a heavy-bottomed pan. Heat over medium-low heat, stirring frequently to prevent sticking or scorching.

Reduce the Milk

  • Continue to simmer, stirring occasionally, for about 30-40 minutes, or until the mixture has reduced by about half and has thickened significantly. This is crucial for a creamy kulfi.

Sweeten and Flavor

  • Stir in the sugar and continue to cook for another 5 minutes, stirring constantly. Remove from the heat and stir in the Thandai Masala and chopped pistachios. Let the mixture cool completely.

Freeze the Kulfi

  • Once the mixture is completely cool, pour it into kulfi molds or popsicle molds. Ensure there is enough space to accommodate expansion during freezing.
