Ingredients

- 1 can (14 oz) Sweetened Milk but condensed milk provides richer flavor and creaminess, condensed, may substitute with 1 cup sugar
- 50 grams Milk dried, whole dried milk; also known as mawa; can be found in indian grocery stores
- 1/4 cup Sugar adjust to your preferred sweetness level

- 1 tbsp Almonds roughly chopped
- 1 tbsp Pistachios optional, roughly chopped
- 6-8 Earthenware Pots matkas, small, these are essential for the authentic matka kulfi experience. find them at indian grocery stores.
Instructions
Prepare the Saffron
- Soak 1/2 teaspoon of saffron strands in 2 tablespoons of warm milk for at least 15 minutes to release its color and flavor.
Reduce the Milk
- In a heavy-bottomed saucepan, combine 5 cups of whole milk and 1 can (14 oz) of sweetened condensed milk. Heat over medium heat, stirring occasionally to prevent sticking. Reduce the heat to low and simmer gently, stirring frequently, until the mixture reduces to about 1/4 of its original volume. This takes approximately 45-60 minutes.
Incorporate the Remaining Ingredients
- Stir in 50 grams of mawa (whole dried milk), 1/4 cup of sugar, and 1/4 teaspoon of cardamom powder. Continue to stir until the mawa is completely dissolved and the mixture is smooth and creamy.
Add Saffron and Nuts
- Stir in the saffron-infused milk and the chopped almonds and pistachios. Mix thoroughly to combine.
Freeze the Kulfi
- Pour the kulfi mixture into the small earthenware pots (matkas), filling them almost to the top. Cover the pots tightly with lids or plastic wrap. Place them in the freezer for at least 4-5 hours, or preferably overnight, until the kulfi is completely frozen solid.
Serve and Enjoy
